Simple print of Cookie Monster Cookie Cutter. Not much to say, but here you have a perfect recipie for classic brown Christmas cookies that you can stamp.

Brown cookies are classic cookies for Christmas in Denmark - yes, they are the very essance of Christmas. Smell this cookie and you know that Christmas is here!

When you get started with this recipe for the brown cookie dough, get several small rolls of dough ready, put them in the freezer and bake fresh brown cookies in a pinch. The easy brown cookies are crispy, delicious and well-seasoned.

Brown Cookie Dough

  • 250 g butter in smaller pieces
  • 125 g light syrup (approx. 3/4 dl) 
  • 250 g sugar (approx. 3 dl) 
  • 1 tablespoon ground cinnamon 
  • 1 tsp ground clove 
  • 100 g chopped, finely chopped almonds, without the peel
  • 1 3/4 tsp potash 
  • 1 tablespoon water (luke warm) 
  • 500 g wheat flour (approx. 81/2 dl)

This is how you make the cookies

  1. Put butter, syrup and sugar in a large saucepan. Let it melt over even heat and with stirring - it should not boil. 
  2. Put the sweet butter mixture in a bowl and add cinnamon, cloves and almonds.
  3. Stir until the mixture is semi-cold (approx. 28°). Dissolve the potash in the water and stir it in the spicy, sweet butter mixture together with the flour - little by little (hold back some of the flour if necessary). 
  4. Divide the dough into 3 portions and roll them into rolls (about 4,5 cm in diameter).
  5.  Place the brown cookie dough covered in the refrigerator for at least 1 day.
  6. Cut the rolls into very thin cakes and place them on sheets of baking paper.
  7. Press the Cookie Monster Cookie Cutter into it
  8. Approx. 7 min. at 175°C - in a traditional oven.
